Doris and Jesse’s ‘Once in a Blue Moon’ Caribbean Beach Wedding by Alden Melendez Photography

Today I have a real treat for you as I take you off to Honduras for the wedding of Doris and Jesse. If you are anything like me, with the cold January weather, you will be desperate to get abroad this year. Being locked in the country for the past two years has really made me long to jet off on a plane somewhere for some sunshine and this beach wedding is really going to make you feel like a holiday! Doris and Jesse were married on 22nd August 2021 at Las Verandas Hotel & Villas. After having to postpone their wedding once due to the pandemic, they at last settled on a new date where the moon aligned perfectly and their truly romantic and heartfelt wedding ceremony ran to pure perfection. The flowers, the backdrop, the crystal blue sea, all made for a truly breathtaking wedding. Captured by Alden Melendez Photography and Submitted by Las Verandas Hotel & Villas.

For Doris and Jesse the moon had to align perfectly for their special day! after postponing their wedding in 2020 and planning for two years, the date was set for Sunday, August 22, 2021 when the moon reached it peak illumination, the last of the summer, when something extremely rare in occurrence happens and only in a month before a featured solstice or an equinox, a fourth full Blue Moon.
Doris, originally from Honduras living in New Jersey is a presenter for New York 1 and Jesse, Founder of mademeals.co with their family and closest friends traveled to the island of Roatan, Honduras for the 3 day event: Welcome Party, rehearsal dinner & the BIG day—hosting 75 guests.

The boho-chic wedding took place at the luxurious and Internationally Awarded Las Verandas Hotel & Villas on its private beach where the moon-shaped-arch decor with lush colors and perfect weather next to the ocean created the most beautiful and heartfelt family affair. The Bride and Groom exchanged vows with laughter and tears. The guests were welcomed to the reception with Signature Cocktails Doris’ “Over the Moon” and Jesse’s “Lunar Eclipse” served during sunset fit the occasion perfectly. The Moon and the Stars came out for the evenings reception, romantic candlelight’s welcomed guests to their tables, toasts were made, Garifuna Punta Dancers entertained and the traditional Gifiti liquor was served to entice guests to party! positivity and love was all around, the Blue Moon shone down over this amazing couple with blessings and the night ended with an unexpected pool party.
